THE PROJECT CONSORTIUM

The project consortium consists of the stakeholders of research, higher education, production and certification sectors. Its members had to solve several unforeseen organisational and professional problems when after four and a half years of work in august 2013 they finally bottled and marketed the first delicious and healthy organic einkorn beer (Alakor Bio Sör). In Hungary the organically bred modern einkorn wheat varieties were placed on the market as a result of the project and for today sufficient experiences have been gained on einkorn wheat concerning large-scale farming, processing, storing and use in beer production.

  •  production and laboratory analytical tests of organic einkorn wheat varieties and barley seeds,
  • elaboration of pilot and large-scale production technology of organically bred einkorn wheat and organic barley varieties
Department of Brewing and Distilling, Corvinus University of Budapest (HU)
  •  elaboration of malting technology;
  •  Preparing of technological procedures at laboratory level (modelling of mashing, rationalisation of barley malt/wheat ratio);
  • pilot brewing experiments (brewing optimisation, establishment of fermentation technologies);
  •  laboratory analytical tests (mineral composition); quality stability testing in the course of production cycles

  •  implementation of pilot and large-scale production technology of organically bred einkorn wheat and organic barley varieties, crop rotation optimisation;
  •  elaboration of husking and storing technologies of einkorn wheat varieties;
  •  brewing using einkorn wheat and barley (contracted);
  •  placing organic beer on the market; market research and marketing
